The future Rooftop at Riverside food truck park, which broke ground this spring in Bonita Springs, is accepting applications for potential vendors until Thanksgiving. With more than 100 registered food trucks in Lee and Collier counties, the developers of the new regional business expect applications for the eight food truck pads to be competitive. More than 20 trucks have applied within the first week and the selected trucks will be announced in December. “It’s important to us that the trucks are good representations of the community, the growing food scene, and of course, a balance of quality, experience and fun,” said Chris Magnus, founder and operator. The park design includes a two-story bar on Old 41 Road that will overlook Riverside Park with a large center space for activities and events. The opening date is set for June 1 next summer.
