Chartreuse, a craft cocktail and dessert lounge, opens today in the historic district of Bonita Springs on Old 41 Road. The green-yellow hue of chartreuse accents the décor at the bar, which strives for a swanky 1930’s vibe, says Danielle Dyer, who co-owns the business with her husband, Stephen, and business partner Peggy Baker. Cocktails created at a pre-opening celebration Friday included the Chartreuse Swizzle with green chartreuse, pineapple, angostura bitters and absinthe; Bloc Party with vodka, watermelon, mint and lime; Swan Song with gin, aperol, lemon and Cointreau liqueur; and Smokin’ Buddies with Johnny Walker Black whisky, mezcal and peppered beef jerky. In addition to classic and craft cocktails, wine and beer, desserts will be prepared by nearby Survey Cafe in Bonita. Chartreuse, 27313 Old 41 Road, is open 4 to 11 p.m. Tuesday through Thursday, 4 p.m. to 1 a.m. Friday, 11 a.m. to 1 a.m. Saturday, 11 a.m. to 11 p.m. Sunday, and closed Mondays.
