Del Mar Naples, a new concept from Cameron Mitchell Restaurants, is slated to open today at 494 Fifth Ave. S. in Naples. David Vilchez is the executive chef. Most recently, Vilchez was executive chef at another Cameron Mitchell Restaurants’ concept, Ocean Prime Beverly Hills. Vilchez enlisted in the U.S. Navy at 17 and trained to become a culinary specialist on deck. Upon returning to his hometown of Los Angeles, Vilchez enrolled at Le Cordon Bleu and was introduced to the European style of cooking training at the Los Angeles Country Club by chef Christian Reber. Vilchez held several chef positions at Los Angeles restaurants before taking the helm as executive chef at Ocean Prime Beverly Hills in 2019.
